400 g Chicken Fillet
5 Eggplants (quartered)/ or Pea Eggplants
7-8 Kaffir lime leaves
2 tbsp Palm sugar
1 Red Spur Chili (De-seeded)
1 cup Sweet Basil
2 cups Coconut milk
1 cup Coconut cream
2 tbsp Fish sauce
3 tbsp Cooking oil
